Ecodex is a fungal dextranase enzyme obtained through controlled fermentation of Penicillium paecilomyces. It hydrolyses dextran into glucose, isomaltose, and iso-maltotriose, helping reduce viscosity and improve crystallization and evaporation efficiency.
